You guys probably already found some of these, but I just saw them today!
1) Night's HQ is missing front air dam right before it flips over.
2) Max uses only his hurt arm to pick up the feral kid while he is (max is) sitting in the drivers seat of the moving tanker
3) The sand is spilling out of the tanker during the chase, right before Pappagalo pulls alongside it to get feral kid
4) The biker who sticks his hand in the wheels of the tanker, he's not giving the cycle any gas, his hand is just resting on the throttle, and then he takes that hand off the throttle from the resting position and reaches in the wheel, getting sucked in, AND DOSEN'T LOSE ANY SPEED!!

I noticed that too but I didn't really think it was a flub. I always assumed it was a little clue that the film makers put in for the astute viewer.

two more I noticed are that March Hare starts out with a front spoiler and then later on it is missing. Also Nightrider pursuit special has different front spoilers it looks like. I could be wrong, but sometimes the car has a solid black spoiler, and sometimes it appears to have like grey duct tape on it.

Could be done with a cruise control rig. I've seen a guy overtaking on a bike with his right forefinger up his nose. You can pull it off on most of the big tourers from stock, but there is another way to do it. Remove the return spring from the twistgrip and you can flick V's at Volvo's and stupidly designed speed cameras with both hands. But I doubt the filmmakers thought of that. They didn't need to - the bike was hanging off a batch of rope.

Of course, the only problem is that it runs mainly on food garbage.
I think week old bologna would be hard to come by in the wasteland.
