Where have you seen Max references? Here's a couple to start...
The Simpsons episode where Bart has to apologize to the Aussie people, and you see Wez-type people outside the gate.
The Simpsons episode where Nelson and his gang circle around the group on their minibikes.
Porn site: Thunder's Dome
Playstation 2 game: Ty The Tasmanian Tiger. One level called "Beyond The Black Stump" where you have to save 8 little koala kids. Another level where you have to save "Sheila" from Frills on these 5-wheeled turbine-powered bikes. The Frills also have tires for shoulder pads.
The term: Driving like Mad Max.
Movie: Weird Science. Wez make a guest appearance.
Kids TV: I heard Wez was on Power Rangers.
Let the games begin...

Lethal Weapon - Mel Gibson's policeman character has gone crazy after the death of wife and the character even has the same initials (Max Rokantansky and Martyn Riggs)
And is there anything in the way Mel is refused to be allowed to drive for most of the film by Murtaugh 'because he is suicidal'?
There are more MM references around buyt my brain is a little fuzzy at the moment so more later....

There's a great South Park episode where the girls make a compound to keep the boys out & they turn up on there bikes/trikes looking like the Humungous's dogs of war. Butters then does a great impression of the Humungous asking them to leave the camp.

Just saw ST Nemesis yesterday...yep, the dune buggy chase/shootout scene reminded me of some movie I saw back in the early 80's...set in Australia or someplace like that.

Other than having appearances by several actors from the MMM Trilogy (Ginnie, Hugh Keys Byrne, Bruce Spence..)
Farscape has had a reference or two.
Chrichton: "Man, this place is like, totally.... THUNDERDOME!"
then the other characters look at him as if he's nuts..
"Nevermind. Nobody saw the third one anyway."
Another episode had various characters riding around in a desert in Junkmobiles..

I knew Virginia Hey played "Big Blue" but were the others guest stars or were they on for a couple of shows?
At work on our lunch hour, the 3-D studio will play ping pong. When someone is playing really aggressively, a couple of us will say; "Two men enter, one man leave." John Fox gets really into it and gets upset if he loses, so we tell him "Relax dude, this isn't Thunderdome or anything. It's just a game."
2001 North American International Auto Show - Detroit - COBO Hall: Mitsubishi presented a concept 4x4 dubbed "Mad Max." It looked goofy in my opinion. It was red, not black...for starters. The orange GTO mock-concept car would have been better suited for the title...just give it the "Henry Ford" paint treatment.

Australian and New Zeland Defender(Australian army magazine) had and article on Somalia in 1993 with some Aussie troops their, the reporter said the place was like something out of Mad Max.
Atomic(Computer Magazine) had an article on overclocking your PC. They were talking about what some people do. The guy wrote " These shenanigans are not unlike adding a nitrous oxide injection system to your car: they're great on the drag strip sure, but not helpful in daily driving, unless your up against the last of the V8 Interceptors".

Hugh Keys Byrne played "Grunchlik" (Sp?), the Diagnosan's assistant in "Die Me Dichotomy" & "Season of Death" (Season 2/3)
And Bruce spence played the leader of a civilization the group visited in Season four. Don't know the name of the Character or the Episode title.
