I've seen some stills from the original Mad Max and read story where he is supposed to be down by a stream, cleaning up from his wounds.

In the Road Warrior there in the opening montage there is footage of a younger Max from the original that was not in Mad Max. Is this lost footage on any of the DVD films in the extras?

Unfortunately not, mate.
Joanne samuel, in an interview recently revealed an awesome black and white photo of Max down by the river dressing his wounds, though.
It survives somewhere... just not on dvd or laserdisc yet

there is a lot of 'lost' footage. There was a scene where Goose's girlfriend (oh was that also cut?) throw's his birthday cake at a biker (Grant Page - who almost fell off the back of the bike)

Yeah that scene and most of the others were in the novel.
You can see the painting for the film was done before the filming was completed, because there's a burning building in the background - Cause in the original script TC's gang firebomb the MFP headquarters
