Of course you didn't translate what Mel said, but you did imply that his comment solely related to the third film's style which is an interesting conjecture but probably wrong as what he said seemed to be applied in a sense of totality and was delivered with a hint of negative recollection. In Mel's own words, "and the third one...I think y'know, we lost Byron after that and I think George was really affected by it and, ummm... and so... and then the third one was kind of an attempt to... I don't know... do something else but I don't know that it ever knew what it wanted to do!" That isn't any kind of endorsement no matter how you look at it for a film that had two directors.
I wish I knew the context of this quote from John McCarty's book.

Les goûts et les couleurs..., (tastes and colors) like we say in France
Everyone has an opinion on this film, not necessarily the same of course and... it's OK! Personally, I think Thunderdome is a good movie, a beautiful conclusion of Max's story and inner journey.

It doesn't matter. It wasn't HIS movie anyway. The creature goes beyond the creator(s).
And... he delivered the best as Max in #3, so I don't care what he said off-screen.

The role has called for him to trudge through blazing sand dunes into a pair of wind machines, and he is distinctly unhappy about it all. "I don't want to be doing this interview," he pouts, affecting the air of an injured adolescent. "I don't even want to be making this film. It's just a piece of shit. Don't print that."

And if I have to say it all, Mel himself lately declared:
