But I can't help but wonder why those cubes are stacked up like a gate entrance, especially since the driver just makes it between them.
It's the first option mate. In the original Instagram link, the user who posted the video says it was a stunt test to make sure everything would go as planned before using the actual vehicle that "one big shot". -It could be a reusable test stunt rig for practicing the maneuvers to get the stunt right for the 'one big shot' that they want to gt totally right rather than cross their fingers on. As you could see, the whole frame is basically a lightweight metal skeleton which may only take superficial damage in the test runs and can be reused will little repair time. Kinda like a Mechano truck or something. The cubes are there to represent a real set obstacle for the final shoot also, can easily be restacked for another take and you're not destroying set pieces.
OR
It's a massive motion capture set where they wreck a CG rig and CG set pieces so it can be reused if needed, the skeletal truck just being the physical tracking body.
