Greetings,
As a New Member, but fan of the film since '79, I have been considering The SouthBeach Version for sometime. Since the "Pricey" One is out of range for awhile,the only thing holding me back was all variations in their quality/service. Also, as I haven't read all the threads here, there is an issue on the Shoulder Caps...Is there a post that shows what this jacket looks like with their Stock/Leather Caps on? I'm one those not talented enough to modify it, but would really like a copy of this jacket.

I say go for it. The shoulder caps don't look that bad from a few feet away, and only a real fan will spot up close that there's something wrong with them.
There should be some photos around somewhere of the southbeach MM1 jacket. I have one but I replaced my caps with plastic and didn't take any "before" photos, sorry.
I think the MFP guys in the Dragon Con 2009 parade had Southbeach jackets on, so you could do a search for photos and videos of them.

Haven't you been saving since 1979?
If you really want the real deal, I would strongly suggest you hold off and save the money for the AbbyShot.
How do I know? Because I used to be That Guy, the one who buys the Chevette because it's all he can afford right now, and then spends enough money on stupid mods trying to get the thing to where he wants it that he might as well have just saved for the Corvette in the first place. (I'm also the Master of Bad Analogies, but I think you get the idea.) It took me 30+ years, but I finally learned to pay once for quality. Since I learned that lesson, I've been much happier. Yeah, it stings a little at first, but in the long run, you'll be much happier (and your jacket will last much longer).
