Guzzoline is good, but ya need water too...Wastleland seem to be a dry place. Didn`t see too much of of it though, apart from the rain.
Also: if you stop your engine overnight, then you need a good battery to start it again, no mains means no recharger. Which puts a limit of any vehicle on the life of the battery....top up with distilled.......?

But ya always could pop the clutch on a standard car to start it up.And who's to say that the marauders and the compound folks didn't have a shitload of extra parts laying around.ya gotta think of all those millions of vehicles.Also no offence,but one can't be too careful into overthinking the plot of a movie and the hows and why's.I'm sure supercharged High H.P V8's would be the furthest thing from the truth on the roadways if somthing like Mad Max 2 happened.

I don't think water would be too much of a problem. I'm sure the canteen vehicle for the film crew and actors had plenty on demand, and besides a drive into town would resupply them from the local shops, once shooting restarted for the afternoon scenes.

So here goes on the water thing. Anyone in a situation like Max found himself in that film would have learnt, rather quickly, even the most basic survival skills. Getting water would be the most important. Water could be obtained via a solar still which extracts water from the ground, or any plant life if you have nearby to exploit as a good source. I'm not so sure about surviving in a place like the compound though. You'd need a handy source that's easily replenished. Maybe they had a well tucked in there too.
A flat battery in the desert would mean a major headache. Like BBB said you could bump start the car if you were on solid ground and had a slope to roll it down, and the car had a manual gearbox. But you are truly buggered if you're on sand in an automatic.
As BBB said a supercharged V8 would be low on the list for a practical car to drive in a world governed by a fuel shortage, let alone into the desert. 4x4 at least, and a low gas guzzler for sure would be my choice. I was always partial to those VW dune buggys.
If I were in their shoes, that's what I would choose, despite my preferences for a motorcycle.

Perhaps the BoB is also Variable Displacement?
When the Blower is turned off it also disengages the fuel injectors and the rockers on one side, turning it into a 4 cylinder..
(Had I the money, that's what I'd do)
If I were going to design a vehicle specifically for those environs.. I'd probably go for something similar to these vehicles built for the show "Full Metal Challenge" in overall design, with attention paid to mileage, cargo, comfort, & etc..

i don't think the idea of water value had hit home back then, not like nowadays with doom-an-gloomers going on like we'll all die of thirst next year or two and we need to build a desalination plant to save us.
as for not being a practical vehicle, People would try to 'hang-on' to their old ways for as long as possible, like in mm3 (methane production). (in star trek deep space nine, they introduced 'latinum' because people couldn't believe not having 'money', even in the future). i think most vehicles would have to be motorbikes or vw buggys as suggested.

Another benefit of the VW engines, and for a lot of motorbike engines as well, would be the fact that water wouldn't be needed if they were air cooled. As for the battery question, the bikes would be easy enough if they had a kick start. And I remember from my VW days that some early microbuses and such had a hand crank for starting, so if you could bodge up the right bits your buggy/sandrail could be started by hand if needed. Then the water....the precious water....could be stored in the canteens...."

Bart's right, you can easily over analyze the plot of any movie and find big holes in logic. I always thought that water would have been a more important commodity in the world of mm2. That idea gets addressed in mm3 to a limited extent. I don't think I've seen any PAW based movie that gets all the details "right" though.

Back to the VW Beetle for a moment, I'll point out that the things have Poor to nonexistent dust filtration.
In stock form, they have no oil filtration system and a less than idea Air filtration system.
Some things a vehicle would need in the context of this film, in no particular order.. (feel free to add)
1. Speed - Acceleration and Cruise - To pursue or to avoid pursuit.
2. Durability - resistance to breakage, wear & Impact - (See #1.)
3. Ability to go off-road. Can't always count on having tarmac.
4. Storage - Food, water, fuel, equipment, trade goods, firewood, etc..
5. Mileage - Fuel is scarce, you want to use as little as possible, yet still be able to Run from enemies or climb over obstacles - (See 1 & 3)
Obviously, some of these are Compromises.
