The 2002 Interceptor and the photo we saw wasn't from Fury Road. It was a hero car a South African company put together when they heard Mad Max 4 was going to be filmed in Namibia as a bid to build and supply the vehicles. The Interceptor was their "demo" and while they did get the job when the production was shutdown the car was shipped to Australia and stored until Fury Road started back up and began work on it which is how we finally see it in the 2009 press conference.
So if that was just a demo, it's possible the 2002 FR didnt even feature an Interceptor at all? But once Mel was out and they decided to go with a younger Max they decided to include it maybe...

i see...

Speaking of the 2009 Interceptor demo car, i thought that car will be featured in FR, it looks so different and mean. Turns out the one similar to RW version is used :(

It would take a while to find it but I remember reading in the Fury Road cars thread that the car at the charity event was the 2002/2009 car modified. I remember the change in the rear marker lights being questioned and explained.

That would be my opinion.
